At the heart of our offerings is the renowned FireWorks Feast—a celebration of fresh, seasonal ingredients sourced directly from our Culinary Farm. Each dish is prepared over live fire, served across a variety of outdoor fire stations, and enjoyed in the magical ambiance of the outdoor Fire Kitchen. From fragrant herb gardens and enchanting woodland trails to the Mushroom Patch and SkyDeck, every corner of our property invites exploration, inspiration, and delight.
The FireWorks Feast
Our nightly celebration of our Culinary Farm, the food artisans and foraged ingredients of Prince Edward Island. A multi-course sensory experience and the legendary live fire display of the FireWorks Hearth shared festively at our long communal feast tables. An intricate progression of flavours both classic and creative.
A Culinary Adventure Rooted in Tradition
Your evening begins with a Culinary Chat, where you’ll savour the freshest tastes and explore the vibrant gardens that supply our Feast. Next, enjoy Oyster Hour, featuring unlimited raw oysters, ember-roasted bites, and hors d’oeuvres prepared with live fire. Then, settle in for the Feast, an unforgettable multi-course meal served in front of Chef Michael Smith’s legendary 25-foot live-fire hearth.
The Feast features:
-Bread Course: Wood-baked bread served warm with our curated pate, creams and butters.
-NEW: Harvest Share
-Iron Chowder: A smoky, rich chowder showcasing local ingredients and sea vegetables.
-Earth Plate & Salad Course: Vibrant greens and vegetables from our Culinary Farm representation the earth-to-farm-to-plate.
-Meat & Vegetables Course: Unique Certified PEI Beef cuts, and our signature brisket paired with wood-fired seasonal vegetables and ox tail gravy.
-Farm Dessert: Sweet creations featuring island fruits, foraged plants and farm vegetables.
The night ends under the stars, toasting house-made marshmallows over an open fire.
